I got a mold for pigs in a blanket that I don’t think will fit any small sausages. And since I did not have any sausages in the fridge, I have baked some pigs using a coconut muffin recipe.
Ingredients:
3 eggs 3 tbsp monk fruit sweetener 3 tbsp coconut oil 1/4 cup coconut flour 1/4 tsp baking powder (!!! This ingredient I forgot to add this time 😝).
Directions:
In a bowl mix all the ingredients together. Let the mixture sit for 10 minutes.
Preheat your oven at 350 F.
I coated the mold with coconut oil, but I don’t think it’s that good idea, since the mixture has oil inside. Add the mixture into each pig’s mold. I put the mold on a baking sheet, since I never put a silicone mold directly on the oven rack.
Bake them for 30 minutes.
The result was pretty funny and delicious, but a little bit oily on top – hence the advice to not coat your molds with oil.
