Strawberry and Chocolate Chip Muffin Recipe Directions

Preheat oven to 350°.  Line your muffin pan with 12 cupcake /muffin liners and set aside.

Mash both bananas in a large mixing bowl.  Add the egg, melted butter, milk, yogurt, and vanilla. Stir until mixed well. Set aside. In a separate medium bowl, add 1 1/4 cup of flour, baking powder, sugar, and salt. Whisk to combine.

Add the dry ingredients to the mashed banana mixture and gently stir until all ingredients are wet.  Do not over-stir the flour mixture and the liquid ingredients.

Add your sliced strawberries to a small mixing bowl and sprinkle 1 Tablespoon of flour. Gently toss to coat. This will help prevent the strawberries from sinking to the bottom of the batter. Gently fold the strawberries into the muffin batter.

Fold in the chocolate chips and pour batter into each muffin tin, filling 3/4 of the way from the top. Optional – sprinkle coarse sugar on top of each muffin.

Bake at 350° for 20 to 22 minutes or until an inserted toothpick comes out clean.

Cool the muffins in their pan for 5 minutes before transferring them to a wire rack to complete the cooling process. Serve at room temperature.

Tips and Variations:

  • Swap in white chocolate chips or semi-sweet chocolate chips for an entirely different experience.
  • If you don’t like strawberries, feel free to use other juicy berries like raspberries or blueberries.
  • Use a cookie scoop or an ice cream scoop to help you get the perfect measurement. A 1/4 measuring cup would also do.
  • Make sure to leave additional fresh fruit on the side for serving.
  • I like to use paper liners when making muffins or cupcakes. It makes clean-up that much easier.
  • Consider making this breakfast treat on Valentine’s Day. Serve with a side of chocolate-covered strawberries.
  • To add more chocolate flavor, sprinkle some cocoa powder into your dry mix. 2 tablespoons will do.
  • To store, seal the remaining muffins in an airtight container. You can also tightly wrap your dish in plastic wrap.
  • Feel free to swap in whole wheat flour for traditional flour.
