Fall has arrived and the leaves are gorgeous this time of year! Now that it’s time to start shopping for Halloween costumes again, it’s also time to bust out all those cozy recipes. I’m always in need of a good quick and easy side dish. These Best Honey Glazed Roasted Carrots are the perfect addition to any dinner. We made them with baby carrots so it makes the recipe even easier! No prepping the carrots, just dump them out of the package and coat them in the honey glaze!
Easy Oven Roasted Carrots
Oven roasted veggies are always a hit! But if you have kids or maybe a picky husband, coating the veggies in a sweet glaze is a great way to make sure they love them. I always prefer to bring a honey glazed veggie side dish when I go to a party because let’s be honest, most people prefer sweet veggies! And at the end of the day, at least you’re getting your veggies somehow.
Easy Honey Glazed Carrots
You can make these with any carrots, not just baby carrots. Just try to use carrots that are similar in thickness (as opposed to some thick and huge and the others skinny). If you do need to slice some of the bigger carrots lengthwise to even out the thickness, go head and do that! You can keep the carrots full in length or chop the up into smaller pieces before roasting.
If you ever need to make a dish really pop, add a sprinkle of chopped parsley!

The Best Honey Glazed Roasted Carrots
Quick and easy side dish that your whole family will love! These Best Honey Glazed Roasted Carrots are so delicious and perfectly sweet!
2 lbs peeled baby carrots 6 tbsp melted butter 1/4 cup honey 3 cloves garlic (minced) 1/4 tsp salt 1/4 tsp pepper
Preheat oven to 425 degrees.
Place the carrots in a large bowl. In a small bowl, mix all ingredients except the carrots. Mix well and then pour over the carrots. Stir so the carrots are coated in the honey garlic butter mixture.
Bake on a sheet pan for 27-30 minutes or until the carrots are tender (test with a fork).
Turn the broiler on and move the carrots to the top rack. Roast for another 3-5 minutes or until the carrots are crispt and slightly golden brown.
Serve while hot.
