Banana bread is fast becoming a staple in my house. And being as I had plenty of bananas that needed to be used up, I thought… why not make another loaf? This time around I added in a LOT of fresh strawberries to an already fairly thick batter. The end result was a perfectly delicious Strawberry Banana Bread!
Do not mind the thick batter of this bread. It’s supposed to be that way! As the bread bakes, the strawberries release their natural juices and the batter will gain its moisture from that instead! So don’t fear the batter being so thick.
I served my bread with more fresh strawberries and banana slices. Maybe a little pat of butter too!

Ingredients:
• 1/3 C. Oil
• 1/4 C. Brown Sugar/Stevia Blend
• 1/4 C. Sugar
• 1/4 C. Plain Fat Free Greek Yogurt
• 1 Whole Large Egg
• 2 Tsp. Vanilla Extract
• 1 1/4 C. Flour
• 1/2 Tsp. Baking Powder
• 1/2 Tsp. Baking Soda
• 1/2 Tsp. Salt
• 1 C. Mashed Banana
• 1 1/2 C. Strawberries
• 3 Tbsp. Flour
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x5” baking dish with non-stick baking spray; set aside.
In the base of a stand mixer, beat together the 1/3 C. oil, 1/4 C. brown sugar blend, 1/2 C. sugar, 1/4 C. greek yogurt, 1 egg, and 2 Tsp. vanilla.
In a separate bowl, whisk together the 1 1/4 C. flour, 1/2 Tsp. baking powder, 1/2 Tsp. baking soda, and 1/2 Tsp. salt.
Add the dry ingredients to the wet and mix until JUST combined.
Fold in the 1 C. mashed banana and 1/2 C. strawberries.
Pour the batter out into the prepared baking pan and place in the oven to bake for 45 minutes.
Check on the bread at the 45 minute mark and tent with foil if need be.
Bake for another 10-15 minutes or until an inserted toothpick comes out clean.
Set aside to cook for 10 minutes before turning out to a wire rack to continue cooling.
Slice into 8 pieces and enjoy!
