Ingredients: 1 1/4 cup tigernut flour 1/4 cup tapioca starch 1/4 tsp baking soda 1/4 cup apple sauce 1/4 cup maple syrup 1/2 cup fresh or frozen wild blueberries 1 tbsp gelatin 1/4 cup boiling water Instructions: Preheat oven to 350ºF. In a large bowl, mix together the tigernut flour, tapioca starch and the baking soda. Add in the apple sauce and maple syrup and combine. Mix in the blueberries.
