Fall is finally here, and I couldn’t be more ready for it! One of my fondest memories during this time of year is attending the annual harvest festival in Hood River, Oregon with my mom and grandma. While my grandma is no longer with us, it’s still a fun little event I get to enjoy with my mom, and I love that it never changes. The festival still offers the same local products and entertainment, and has kept that comforting small-town atmosphere, despite how much the town has grown over the years. Along with big home-baked cookies, delicious berry jams, the freshest kettle corn on earth, and an endless array of freshly-picked orchard apples, you can always find a vendor...

These sausage, ham, and cheese loaves are a hearty, traditional Portuguese bread, that is made with presunto, chouriço, and semi-firm sheep’s milk cheese

They can also be made into rolls. From | The New Portuguese Table | Clarkson Potter, 2009 Every Saturday when I was growing up, my mother would go to the local Portuguese bakery and buy a dozen chouriço rolls—torpedo-shaped logs stuffed with sausage. By Monday, they would be gone, mostly due to me. To dress up my childhood classic, I added presunto and cheese, and sometimes sautéed onions and garlic, to the dough. I followed the recipe for milk and butter toasted oat porridge sourdough from "Full Proof Baking" with some modifications.  Thank you to Kristen for the idea! Characteristic of this bread:  The texture is moist with a hard crust and very mild tangy taste. Usually sourdough starter provides an aromatic flavour to the bread and with addition of toasted butter oat porridge, the bread has a more substantial flavour.
