This weeknight Indian-spiced super easy tandoori chicken is delicious, Whole30-friendly, and a dinner staple at my house

Marinate in the morning and bake in the evening! What is tandoori? Tandoori actually refers to a type of Indian cooking that utilizes a tandoor, a super hot round clay oven. Proteins are traditionally marinated in yogurt or coconut milk whisked with an aromatic spice blend before they’re roasted in the clay oven. Like most of you, I don’t own a traditional tandoor, so I simply cook my tandoori-inspired meat and seafood in the oven or out on the backyard grill. What’s in tandoori spice blend? I love these dishes because they’re nutritious and you can make them with whatever protein, cheese, and veggies you have on hand—which means they’re never quite the same. For brunch on the weekends, I like to upgrade such egg-based dishes with a bit of forethought.
